We present a home-style interpretation of a drink found on our latest drinks list. Designed as a batch pre-mixed which is loaded with flavours of the holiday season, making it perfect for your festive gathering. Reserve the remaining citrus syrup for morning drinks, puddings, or to make additional servings of bikinis.
The Bikini Cocktail
Yields 10 servings
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place all the items inside a pan, heat until it reaches a simmer, stirring to dissolve. After that, turn off the stove and let it to cool entirely. Decant to a clean bottle, seal keeping it chilled, it will last for up to a month.
Preparing the Batch Mix: Combine all the liquid ingredients into one sizeable container, leave to sit for an hour, then filter it , ideally through muslin, to ensure it's fully clarified.
For serving: Measure 85ml of your batch mix into a cocktail shaker filled with ice, gently stirring carefully for a minute to chill. Filter into an chilled martini glass or similar, decorate with a few cranberries and finish by giving it a brief mist of mandarin oil above the glass.
